Swedish Apple Pie - Truly As Easy As Pie (gluten free)

This is a pie that I've been making since I was a child, which was a long time ago.  It doesn't require any special skill or equipment.  You don't even need a rolling pin.  This is Swedish Apple Pie.
I decided to make this particular one gluten free, so, I used Bob's Red Mill Gluten Free 1 to 1 Baking Flour.  If you don't need to be gluten free, use all purpose flour.
Mix all the dry ingredients together.
Add the chopped nuts and chopped apple.
 Mix the egg and vanilla in a small bowl.
Add the egg/vanilla mixture to the other ingredients.
Spread the mixture into a well greased pie pan.
Bake at 350 degrees for 25 minutes.
Allow to cool slightly and slice.
Enjoy with whipped cream or ice cream.

Swedish Apple Pie

Ingredients:
½ cup gluten free all-purpose flour (or regular flour)
½ cup sugar
2 tsp baking powder
¼ tsp cinnamon
Dash salt
½ cup chopped pecans
1 ½ cups diced apples
1 egg, beaten
1 tsp vanilla
  1. Preheat oven to 350 degrees.  Grease 9” pie plate.
  2. Combine dry ingredients.
  3. Add pecans and apples.
  4. Mix egg with vanilla and add to apple mixture.
  5. Spread into prepared pan.
  6. Bake at 350 degrees for 25 minutes.
  7. Top with whipped cream or ice cream, if desired.

I love Swedish Apple Pie, although the recipe I use is a little different!

Most of the newer recipes call for butter, a lot of butter! This one is very simple and delicious and you don't have to feel guilty about adding the whipped cream or ice cream.
